Our favorite egg salad

I make egg salad almost once a week!  Everyone at our house loves it and it is a quick and easy snack or dinner when we are on the run.

6 hard-cooked eggs, diced
Dash of celery salt
2 1/2 Tbsp mayonnaise
1 Tbsp vinegar
1/4 tsp onion powder
1/2 tsp salt
1/2 tsp Worcestershire sauce
1/8 tsp pepper

Mix it all together.  Yummy!

Parmesan Pesto Salmon with Cheese Crisps

This is my favorite salmon recipe to make at home.  I used to get it from Dream Dinners, but I knew the recipe was super simple so I searched for it online and found it.  This will now be a regular.

1/4 cup white wine
Juice from 1 lemon
Garlic minced
3 salmon fillets, 4 oz each
1/2 cup shredded parmesan cheese
1/4 cup pesto sauce
2 tablespoons cooking oil

Marinate salmon in wine and lemon juice.  Heat oven to 350.  Spray baking sheet heavily with Pam.  Place a tablespoon on parmesan cheese on sheet and flatten with finger into a circle.  Bake 8-10 minutes.  Cool completely before removing from sheet.  Press parmesan cheese into one side of salmon.  Heat 2 T oil in pan.  Place salmon cheese side down in pan.  Cook 4 minutes Turn and spread pesto on salmon.  Cook until done (5-10 minutes).
Serve salmon fillet topped with cheese crisp.

Deviled Eggs

I wanted to record my deviled egg recipe because I am forever making them.  Any special occasion calls for deviled eggs.

6 Hard Boiled Eggs
1/4 cup mayonnaise
1 teaspoon mustard
1 teaspoon vinegar
Paprika

I must say I never follow this recipe exactly.  I always take liberties especially with the vinegar.  I like mine kind of sour!
Halve the hard boiled eggs and remove the yolks.  Place the yolks in a bowl and mash them with a fork.  Add mayo, mustard, and vinegar.  Add a little bit of salt and pepper.  Stuff the egg white halves with the yolk mixture.  Garnish with paprika.
Enjoy!  Warning - these will go fast...

Sausage & Cheese Wonton Cups

These are so yummy!  They are one of my new favorite appetizers.
10-12 servings

1lb pork sausage
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper

1 cup shredded cheddar cheese
1/2 cup sour cream
24 Wonton wrappers (found in the produce or deli sections)

Preheat oven to 400 degrees.
Cook sausage, cumin and red pepper until brown and crumbly.
In medium bowl stir together sausage mixture, cheese and sour cream.
Spray a 24 cup mini-muffin pan with cooking spray. Fit wonton wraps into muffin pan to form cups, then spray cups with cooking spray.

Divide sausage mixture among cups.

Bake for 10 minutes or until lightly brown.

Sugar Cookies

11/2 cups powdered sugar
1 cup butter, softened
1 teaspoon vanilla
1/2 teaspoon almond extract
1 egg
21/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Mix powdered sugar, butter, vanilla, almond extract and egg in large bowl until well blended.  Stir in flour, baking soda and cream of tartar.  Cover and refrigerate 2 to 3 hours.

Heat oven to 375 degrees.  Divide dough into halves.   Roll each half 3/16 inch thick on lightly floured cloth covered board.  Cut into desired shapes.  Bake on ungreased cookie sheet until edges are light brown, 7 to 8 minutes; remove to wire rack.  Makes 4 dozen cookies.

Salsa Chicken in the Crock Pot

I made this the other night and it is more of a Mexican take on my other Crock-pot chicken recipe, but it met my criteria - yummy and easy!

4 Frozen Boneless Skinless Chicken Breasts
1 package Taco Seasoning Mix
1 cup Salsa
1 can Cream of Chicken Soup

Cook on low for 6-8 hours.  Add 1 cup sour cream.  Shred chicken.  Serve on rice or in a tortilla!
